New to AP thoughts

So we went to the Shops at Crystals in the Aria Hotel/Casino. Now I have wanted the new Ceramic Daytona 116500 but waiting to get one soon will be next to impossible. So I started looking at other brands and the AP 62320ST.00.1220ST.01 white dial caught my eye. It is one beautiful piece and I want to buy it. My questions to you all are;What makes the AP worth almost double the price of the Daytona, both in stainless? Would you buy new from Boutique or from trusted seller? Because of the price is it a good everyday watch? SS flies under the radar, right now I have a TT DJII and a 16710 GMT II. Thanks for the help, I am new to AP and do not know a lot of the brand.
